Wycombe parted company with Taylor last week and have appointed the 47-year-old Waddock as well as his assistant Martin Kuhl.
Waddock said: "This has been the hardest decision I have ever had to make. I have had a fantastic time at Aldershot Town.
The former Republic of Ireland international player joined the Shots in May 2007, leading Aldershot to promotion from the Blue Square Premier back to the Football League in his first season, they also won the Setanta Shield along the way.
After finishing mid-table last season in their return to League Two, the Shots are currently sitting in sixth place.
Wycombe, second from botton of League One, said farewell to the former Shrimpers player and manager Peter Taylor, along with assistant manager Junior Lewis, after they had led the Chairboys to promotion only last May.
